The Eclipse

I don’t know how many of you went out on Monday to view the Solar Eclipse.  When the moon casts the shadow and covers the sun is beyond words. I have never seen a 100% coverage eclipse until yesterday.Eclipse 821201 This is picture I took with my Phone not really good quality but we forgot our camera which was really disappointing but hey its not like others weren’t taking pictures of the event.

So I don’t take many trips I am hoping to remedy that really soon. We left our house around 3am on the 21st to get to St. Claire, Missouri. This was a place that NASA said the line of the total eclipse would happen. The trip was uneventful I mean your stuck in a car for what seems like forever we stopped for breakfast and gas. We got to St. Claire I have to say there where signs everywhere for parking and how much it cost wow was all I could say many places charged upward of 30 dollars to park to see the eclipse. So knowing we saw a rest area not far from the town we went back to it we where really early all the car parking was already gone so we found a spot in a trucker area that someone in a car parked in and parked behind them at an angle we could also get out of because eventually someone parked behind us. Any way we waited I was Tailoring a dress I bought that didn’t fit in the bust area correctly. When the beginning of the eclipse was to start my daughter and I got out put on our NASA approved classes and saw the moon touch the sun which of course was amazing to see. We watched until after the moon started away from the total. So If you haven’t seen the eclipse the next one April 8th, 2024 in the Americas.

Favorite Bread Recipe

This is my Lammas bread.

Ingredients:

  1. 4 cups (1 lb, 4 oz / 566 grams) all-purpose flour
  2. 1 Tablespoons instant yeast
  3. 2 Tablespoons honey
  4. 6 Tablespoons oil ( your favorite neutral oil, or melted butter) I personally Like butter
  5. 4 1/2 cups (2 pounds / 908 grams) warm milk (or water), about 85° F
  6. About 8 cups  bread flour  or more all purpose flour (Probably will not use the whole 8 Cups but you might I have during high humidity most likely though it will be more around 6 cups)
  7. 1½ Tablespoons (22 grams) salt

Directions: This recipe produces three loaves.

Mixing:

Proof yeast in milk and honey until nice and frothy.

In a very large bowl, sift the all-purpose flour (I use a wooden spoon for stirring and a really large Glass Bowl). Make a small well in the middle of the flour mixture and pour in the oil and the milk.

Mix well, then continue to stir vigorously, slowly adding 1 cup of the bread flour at a time and stirring it in, until you’ve added 3 to 4 cups of bread flour and have a sticky, shaggy dough; this should take a few minutes.

Resting (Autolyze):

Cover the bowl with oil sprayed plastic wrap or wet damp(not dripping but not too dry) tea towel and let it rest for 20 minutes. (I keep stacks of these in a cabinet drawer and use them constantly all around the kitchen). This rest period is called the autolyze.

Kneading:

Add the salt and 1 more cup of sifted bread flour and stir it in as best you can. Add another cup of bread flour if the dough is still too sticky to knead repeat as needed. Turn the dough out onto a floured work surface and knead it with floured hands until the dough is soft and smooth, about 8 to 10 minutes.

Try not to over flour that is the reason I sift the flour just need it to get smooth and elastic no stickiness

As you’re kneading, sprinkle a little more flour at a time as needed to keep it from sticking to your hands or the work surface. You want the dough to be as soft as possible without being sticky; you may not need the entire eight cups of bread flour, or you may need a little extra.

Rising:

Using a Bowl that is twice the size of the dough I oil the dough and the container just enough to coat and allow to rest till double in size (when Container is full). Cover with Plastic wrap or lid if bowl comes with it which mine does.

Set the dough somewhere that is preferably between 70°F and 75°F (this is my oven with the light on) until it has doubled in size, around 90 to 130 Minutes (1 1/2hrs to 2 hrs 10 mins).  May need longer just depends on temp and amount of yeast. I like to leave overnight (this is why only 1 TBSP). Ideally, the dough itself should be between 70°F and 75°F. It’s fine if your dough is cooler; it’ll just take longer to rise and will end up even tastier.

I heat the milk to about 100°F (don’t make it any hotter or you’ll risk killing the yeast). If you keep your flour in the freezer (it’s the best place to store whole grain flours which I would do if I had a bigger Freezer that’s where my dad always kept his), use warmer milk, or let the flour come to room temperature first. It’s easy to check the temperature of your dough and ingredients with an inexpensive thermometer. I use a candy thermometer for Liquids and a Dial thermometer with a pointy end for thicker stuff like bread and meat.

When the dough is ready to be shaped, you should be able to push a floured finger deep into it and leave an indentation that doesn’t spring back.  That means it has extended all it can and is really spongy.

Shaping

Turn the risen dough out onto a lightly floured work surface, flattening gently with your hands to break up any large air bubbles. Divide the dough into three equal pieces. The easiest way to divide up dough into loaves or rolls is with a stainless steel dough scraper, also called a bench scraper or pastry scraper. I have two,  the metal one from above and a plastic one, and they’re always in constant use. Nothing works better for cleaning up the counter after working with something that is sticky or floury. Which can be quite messy. Can use them like a squeegee and work your way around the mess to pick it all up.

Shape it to loaves to put in bread pans this is a sandwich bread after all. Oil the bread pans and place loaves in pans.  Place pans back in warm spot and cover with plastic wrap sprayed with oil.

Rising Number Two

Allow them to rise until the dough springs back just a little when you gently poke it with a floured finger, about 40 to 60 minutes this could be longer or shorter depending on temp, and altitude.

If you let the loaves rise too long, they may not have enough energy left to rise once they’re in the oven, and they may even collapse. I have over proofed several times just need to find that happy Middle where I don’t cause a blowout but under proofing or collapses with over proofing.

Bake at 375° for 35 minutes, or until the loaves are golden brown and the bottoms sound hollow if tapped (you need to carefully remove a loaf from the pan to check this).

Remove the loaves immediately from the pans and let them cool on a wire rack. The bread will continue to bake inside while it’s cooling, so try to wait at least 40 minutes before cutting into a loaf.

Store at room temperature or freeze in zipper freezer bags. I like to use the 2.5 gallon jumbo zipper food storage bags, which will fit two loaves. Make sure the loaves are completely cooled before sealing in bags. If you have a bread box wrap in a tea towel and place in clean bread box. If it is anything like in my house it will be gone before the next day. Of course now that Lammas I take two loaves out to the garden for the birds and other animals that come into it.

 

 

 

 

Aug 1st 2017 is around the Corner

Lammas is right around the corner I hope everyone is ready. I know I’m not. Not to worry though it is just me. So I will celebrate on my own. You should look at my Lammas page I will most likely update it this week.

My children aren’t really interested in my beliefs they have there own which I want for them. That is to have their own mind which I constantly remind them that they should research everything and not buy into the rhetoric, Bigotry, and Bull. They should be open to everything and everyone opinion but also make up there own mind.

Its just to frigging hot. So So So HOt!! If you didn’t catch that HOT!!! Don’t feel like doing anything anywhere hot. And it is just going to get Hotter. I can’t believe some people don’t believe in climate change but what ever. I mean glaciers are melting. What are our children going to do when they can’t grow their own food. Hopefully this doesn’t happen but I have a feeling that over crowding, and rising temperatures is going to make for some ugly wars over resources in 50 or so years.  Mostly over water and farmable land.  But what can I do I am just one person that blogs.

The Bugs seem to be out in full force to this year. I can’t believe that I have seen more horse flies, Robber flies, blister beetles and other bugs not to mention chiggers than any other year and that is saying something. (I am scared of the darn flies they bite and it hurts not to mention some lay eggs UGG don’t want a bot fly larva on me YUCK!!) The mosquitoes are horrible they carry a really horrible disease Zika that causes major birth defects and since it is a virus affects adults in ways that are not quiet researched all they way but still can cause some major health issues. Of Course they also carry other diseases such as West Nile, Equine encephalitis, malaria the list goes on and on. Truthfully, I think the Mother is fighting back there are to many humans in the world and this sad thing is birth control.  Yet Science will prevail hopefully. Heck Working in the hospital lab I have seen a several cases of tick born diseases. I have only seen one case in 6 years before this. Things are really bad this year.

Which brings me to my ranting session. Our health Care sucks but if the republicans change the laws its going to suck even more. Where are my rights as a women that needs care it this debacle? I mean they are trying to cut women’s health care. Most Women are poor working class. So you defund Medicare and what do you get women with out healthcare. With out the family planning they need. Then there is there is the defunding of Planned Parenthood this is a really sad day.  UGG this is so Conservative Tea Party Bigotry. Just makes me so mad. See below.

IMBOLIC

Imbolic — Feb 2nd 2013–

What are you going to do this Imbolic? Me personally I am going to sleep most of the day I have to work unfortunately, yet this will not stop me from do somethings.

When I get home this year I am going to light a candle. White (represent purity, purification, protection against negativity), orange(represents Charm, kindness, encouragement, stimulation, optimism, success, abundance, prosperity), Gold (represents  creativity, male energy and the sun) and Yellow (represents knowledge, vitality, Confidence, joy, cheerfulness, learning, mental clarity, concentration candles are supposed to be the best.   Can’t light many in my small home. This is the symbol of the light returning not just the sun but our inner light because as the sun returns we feel better about going out side and celebrating nature away from the cold .

Around this time of year is when the milk starts flowing. Some animals getting ready to breed and getting ready for Spring. In my area of the United States the Male Cardinals are Bright red now. I am going to put out a loaf of bread covered in peanut butter for the birds and other animals that may be struggling in my drought beaten area. Fill up the trough of water that is in the ground.  I on the other had am going to have a cup of Hot Chocolate and dream about the house I am going to build so that I will have a fire place and more room Hopefully by next year.

On my day off I plan on cleaning the house from the ceiling down to the floor. Usually I would do this on the 2nd but since the weather has been warm I am going to do it with the windows open and get every speck of dust and mold out of my house. ( I know that is not totally realistic but that is how I see it as a cleaning ritual).

This is also the start of the maiden cycle of the year.

My Earth Centered Spirituality and my family

Okay, So I have been thinking about bringing my children and husband in on my journey through my Spirituality. Of course I can’t say that my husband will agree with it but he will listen to me. I just think my family has a lot of conflict and we need to find our balance again.

We Wiccans officially don’t have a doctrine per say but we do have a way of life a culture. Nature is in harmony our families should be in harmony also. With a respect to each other. Our roots are indigenous we actually plant them, feel them in our hands, hear  and smell it in the air we are at home with ourselves in Nature. And my family has move away from that and we need to get back into that   mind set.  The mother birthed us all and my children should understand that Earth is our home and we should respect her. They should understand that we need to connect to her in all things from the seasons, to the animals and plants, to the weather; basically all of the natural world.

Of course, the way that they come to their conclusions is there own but we must all go down our own paths in order to get there. I don’t know how I am going to get them to agree especially my son but I must try to include them in my life.

I am thinking baby steps I have already fully brought over my holidays into their lives we celebrate all major Wiccans holidays. Perhaps next I will try with meditation.

Samhain– Halloween—

I hope everyone had a happy Samhain… I was so busy I didn’t get a chance to write.

So Samhain was a good day. I think next year I will plan it a bit differently for my Children. We didn’t go out trick or treating. I decided to stay in. I made a special dinner. We carved pumpkins. Had a pumpkin pie that turn out horrible because I thought I would try a new recipe. We feed the animals some biscuits I made for them out of another bad recipe.  (Moral of story try the recipe before feeding it to family). But we had a fun night in. Since my daughter is still a bit young we didn’t talk about our celebration of our loved ones that have passed on.

 

Wicca: A Year and a day

I decided that I needed to learn more about Wicca. Every aspect. I may not believe in magic but that doesn’t mean that meditation, prayer, ritual and everything that goes along with it isn’t magical in someway or perhaps I just don’t understand what magic really is. Anyway I have started a book. I am pretty isolated where I live. Living in the bible belt there are not many pagans, Wiccans, druids, etc. that show who they really are. So I have always taught myself the Wiccan Way Through books.  So When I Saw WICCA: A Year and A Day By Timothy Roderick I got this overwhelming feeling that I needed it. I usually go with my intuition on things so when I got some money together I went and bought it. I will try to tell you of my journey as much as possible but I don’t think I can express everything in words. When the time comes though I will try.

Asking the Goddess and God for Rain

The Drought has really taken it toll where I live in Oklahoma. I have been asking the Goddess and the God to give us rain for several weeks now. We have stared to receive rain. And I am Grateful. I am going to continue to ask for rain though because we still really need it.

I talk to the Mother more then I do the Father I feel we have a kinship. So when I am sitting around being calm I talk to her from my heart. Talk to her about how my day went. Talk to her about anything about the good and the bad. I ask her for water for the animals and plants. To help me provide for those that are in need.

My Introduction to you!!

I have been blogging for about a year and just now realized I have never truly introduced myself.  My name is Elizabeth.  I am a 36 year old Woman that has been married for approximately 15 years to a wonderful man that really cares about me and his family. We have two beautiful children a boy 14 years old and a girl 7 years old.  I have been a practicing Wiccan off and on since I was 14 years old. I finalized my Wiccan status  when I was 27 years old. I had decided that other religions just didn’t call to me like this one did.

So here is a list of other things that you may like to know about me.

1. I have 3 Associates degrees one in Pre – Pharmacy, One in Biology, One in Secondary Education.

2. I have a BS in Biology with a minor in Chemistry.

3. I believe in a Goddess and God. So that makes me Pagan.

4. I believe in live and let live.  So I although I don’t mind a debate I do get upset with people telling me I am wrong where I believe.  An example is my husband is atheist he doesn’t believe in anything we talk about it some time but I don’t try to change his mind I believe what I believe and I allow him to believe as he believes. The exception would be when people put the health of children or harm others in there belief such as the radicals that bomb others can’t stand those people and hope they wipe themselves out without harming others.

5. I believe in karma and the rule of 3. So if you do good good things come your way and multiplied by three. You do bad eventually it will catch up and be multiplied 3 times.

6. I love gardening, herbalism, and botany.

7. I love to knit, sew, and draw.

8. I love to read sci fiction, romance novels, horror, and some various x rated stuff. ( I am not against sex it is natural)

9. I believe women and men are equal although I have noticed that many people really can be bigoted against women especially in politics. I mean they say they are with us but they are out for their own interests and many of those interests are trying to take away my rights as a woman it make me feel like a minority when women are at least 50% of the population.

10. I am a Mutt a true American a mix of many different European ancestors and Native American. I can trace many ancestors back several 100 years to the start of America.  Right now I am trying my best to get all the paper work together my great great grandmother and great Aunt had Indian Cards I believe this is part of my heritage.

11.  I work in a Medical Laboratory as a Hematology Technologist.

12.  I was abused by my mothers boyfriend as a child and that opened my eyes to what I will not allow in my life. I even warn children and tell them that if anything like that happens they need to tell me about it.

13. I am a home body. And can at times be antisocial.

14. I have a hard time making friends I don’t know what it is that people don’t like but they just don’t seem to like me or may be its because I don’t hang out often with them for them to become true friends I don’t really know but I would like friends. So far my husband is my only friend and he is my best friend.

15.  So times I like to just be. (My husband can be in the same room with me and we just know what each other needs and some times that is just quiet.

16. I try to be a positive person but that is really really hard sometimes to find the gold lining in everything.

17. I will laugh at myself and hope others do the same.

18. I believe in magic but to me it is just stuff we don’t truly understand and until we do It miraculously happens.

19. I believe in things we can’t see because well I can’t see air but its there.

20. I believe in forgive and forget (if you can). There are times that tough love is needed and basically intervention so although you may forgive you can’t forget.

21.  I love earrings and have 4 on one side and two on the other and hope to one day design an earring that covers that whole lobe on the left side While still being lite weight.

22. My favorite color is green.

23. I love to listen to rock, alternative, new age, and just nature sounds.

24. I have a large family I have 5 sisters and 2 brothers. I have several uncles and aunts. My dads mother had many children and my great grandmother had 22 children (several sets of twins) and she out lived many of her children lived to be 103 years old.

I hope this helps you understand me better.

Ostara–Happy Spring

Well it is that time of year when everything thrives. Babies are born to many animals this time of year. Plants flower, leafing out, many different colors abound this time of years. We celebrate the the maiden Goddess in one of her aspects. This is a time of fertility when the Earth is its most at its most fertile. Winters grasp is finally falling away to be replaced by the heat of the coming summer (although I think this year is a bit strange not many cold days it is almost as if summer couldn’t give in to winter).

Many different rituals can be done to worship the Goddess. If you are a solitary practitioner like me and don’t do the elaborate rituals that is how I believe, because the Mother nurtures and talks to us constantly trying to guide us along our path but doesn’t interfere we ultimately choose the path we go down. So I celebrate with coloring of eggs, an Egg hunt for my children, presents  and a basket I guess that would also be traditionally Easter fair yet on a different day not to mention I don’t buy the stuff animals and Easter grass and stuff like that it actually has to be unique and valuable why clutter the house with plastic stuff and things that will never ever be used or will be discarded after one day. I do put out candles and flowery incense, making seed cakes, cleansing the home with spring cleaning, flying kites, Planting plants out in the garden that are frost tolerant, I feed the birds and other animals because of the burden of birth and hatching of little ones that can tax their bodies and I think that the Goddess and God would want that.We also take a nature hikes around our property and have a picnic. And do other games, arts and crafts, stories and many fun things during this time of year.

I like to decorate for the day. I use flowering branches, colored eggs that are to be used during the egg hunt, seasonal flowers such as daffodils,  any of the colors of spring and with rabbits and other animals figurines no many though I am limited on space. I also set up my alter during this time I have to do it outside so I always pray for nice weather with low winds and no rain. And I place out offerings of seeds, and take many of the wild flower seeds I saved from last year and throw all along road ways so that they can repopulate an area that they previously but now no longer live in (it is sad but I see it happen a lot in fact I collected some of my original seeds from those areas for my own garden I even now have a unique variety that grows because of the genetic diversity that happens I don’t think it grows anywhere but in my garden will have to look).

Happy Valentines!!!

So many people I work with do not acknowledge the day of love. Why? I wonder.  It is a day to celebrate the people we love, the pets we love, and the things we love. I know it have become very commercialized with all the red and pink hearts, Teddy bears and such. But is still a day in which love can be said to be in the air. It is sill a day that people can do things for there loved one and enjoy they day with them.

If you truly love the people you want to get gifts for make sure you know what they really want. Don’t get the generic flowers and card with chocolates not everyone likes these things. Perhaps make breakfast or make their favorite item for dinner. Get them something they can truely appreciate and use. I always tell my husband that it useless to get cut flowers that I can only enjoy for a week before they wilt and lose that fresh look. I would rather have a living plant such as a rose or flower to plant in my garden and enjoy it all year long and everytime I look at that rose or flower I think of him and how much I love him. Just remember this a day to celebrate love for those you love.

The origin of Valentines day has many supposed reasons. But it is said to be a christian Saint Valentine’s Day turned into a day of love. Many believe it was to put on the 14th of February to replace the pagan Roman fertility Festival of Lupercalia  celebrated February 15th.

Update on Book of Shadows

Okay, I am here to update you as to what has happened with my book of shadows. I have many pages done and and figured out how to print them on my printer so that I can do a book format. But feel I haven’t really worked on much just mostly templates for journals, gardening, addresses, to do. I didn’t realize that could be so time consuming. I made a few pages for actual my Belief in Wicca. Life though tends to get in the way and as usually throws a curve ball at us. Its that time of the year to get things done such as planting seeds that can survive this time of year and cleaning the garden if you haven’t done so already (I tend to be a procrastinator really a bad habit I am trying to break myself of). But it is getting done Slowly but surely.

Buncombe Board of Ed debate Pagans vs Bible Thumpers.

I know I said it Bible Thumpers those that have closed their minds off and have become fearful and full of hate for something so different as being Pagan. Angela Pippinger and several others went to a Board of Education Meeting to debate on friendly terms religious activities on the school grounds. Now several had very constructive things to say. And you can read about those from the Pagan Mom live-tweets news page. You can also read what lead up to this debate Patti Wigington Bibles Made Available at NC School, schools examine Religious policy, Fear and Loathing in Buncombe County., and here by Mrs. Pippinger herself.

Yet I have to say that for people to lose control and allow anger and fear to ride them is unreasonable and not very Jesus like at all from what I read in the Bible. I pray to the Goddess and God that people open their Minds, Hearts, Souls to the possibility that people have rights to believe what they want as long as it doesn’t infringe on what others believe. I always say to each his own. Why is it that people want to have others see their way instead of accepting and letting others live without fear of persecution.

Why is it that I feel most days like we are outsiders? I keep an open mind I am wholeheartedly American. I believe in our freedoms Why don’t other Americans. Our Constitution may have been created by our founding Fathers whom were Christian, But they were also the ones to decide that Religion had no place in Government.

SO I SAY allow no Hate to interfere, allow no ignorance to rule, allow everyone the rights to be free to worship the way they want to but leave it out of public School.

Imbolic– Happy Midwinter

Imbolic
February 2nd
Imbolic is one of the four fire Festivals. It is also know as Candlemas (Christian influence) and Imbolg, Brid’s Day, Oimelc, Bride’s Day, and so many other names. Imbolic is celebrated midway between winter Solstice and the Spring Equinox.

This is a festival of Young women and Men. This is where we all recognize the cyclic change of the crone to the maiden from the winter to the spring. Using the signs of Spring, the greening of the grass, the flowering of the early spring flowering plants such as the crocus and snow drops. In places where snow is still on the ground and not much spring is to be had this is a perfect time for a festival of warmth, love and light. When the Goddesses womb stirs and the earth begins to wake.
Imbolic literally means “in the belly”. Mother Earth’s stirring of spring with all her hidden magnificence such as the seeds to come and the quickening of the earliest when the ground has grown warmer.

Most people attribute this day to Bride(BREED),but you could easily say that this is the day of Vesta. Yet I believe this is only some of the many forms of the Goddess.

This is a time of cleansing for the spring. A time to prepare for new growth and renewal. Home fires are put out and the Hearth cleansed and relit. Candles are placed around the home and lit to honor the return of the sun. A besom (broom) is used to sweep away the cobwebs and dirt of the home and the set by the front door to welcome the new of spring.

Book of Shadows — Ideas

So here are my Ideas.. Not only is my BOS(short for Book of Shadows) going to have all my beliefs so a usual Wiccan book with holidays, Wiccan Calender for several years, what the Goddess and God are, my Daily Religious practices, Poems, Alter, Herbs for Garden and Health, What Karma is, How I practice, a Magick or Science page (I think of magick as unexplained science), Balance in life, How we were created, Statement of Belief, of course the Wiccan Rede, Pagan Stories many of which I really like such as Pooka pages for my children and their children, Pagan Art mine and others whom have touched my heart(this is going to be hard though Like I said I don’t have much money and all deserve a monetary payment for their contribution),Ritual,Sabbats, about the moon, Casting a circle, the elements, Sacred trees, Signs of the Zodiac, Colors and meaning, Symbols and the alphabets, Planets,the pentagram, Runes, Charkras, Acupressure/ Acupuncture points, The elements, Tools of the craft,Meditations, Dreams, Why I became Wiccan.
But it is also going to be my Journal, Gardening Journal, Knitting Journal, Idea Journal, I am going to put photos of my Children and Family though out the year, Its going to have an area for a Family Tree which I have been working on little by little (it is hard to work on this with so little money and when you have a huge family), I was going to put recipes that we have eaten and loved over the many years.
This is all because I wished I had a book from my grandmother. I mean I have photo graphs and a few things but what do I have that actually represents her and her personality.
So do any of you out there have ideas for me to add to my BOS. Please tell me. Because I am going to start making pages here soon and some will be published here on my Blog.
